This is probably the easiest, yet “yummiest” vegan pancakes recipe. This vegan and healthy recipe makes light, fluffy, and delicious pancakes.
What makes perfect vegan pancakes? The same things that make a perfect non-vegan pancake; Available ingredients, quick to make and a tender and moist result. Sometimes vegan pancakes can be heavy and doughy, but not these babies.
Preparation time is 2 minutes, cooking time 3 minutes, in your belly in 5 minutes.
5 Minute Vegan Pancakes
Number of Servings: 8
1 c whole wheat flour
1 Tbsp sugar
2 tsp baking powder
1/8 tsp salt
1 c silk light (plain)
2 Tbsp canola oil
Optional: chopped blueberries/Thin sliced banana
Heat a skillet to medium-high heat. Combine the dry ingredients in a bowl and mix with a whisk. Add soymilk and canola oil, mix until smooth. Add sliced or chopped fruit.
Time: 1 minute.
For 8 silver dollar pancakes, make each pancake a little over 2 Tablespoons of batter.
Time: 15 seconds.
Flip when you see bubbles in the middle, or when the edges get stiff. Makes 8 one pancake servings.
Time: 3.5 minutes
Total Time to Puffy Pillow pancakes: 5 minutes.
Note: You can add cinnamon-maple powder to the batter and top with maple syrup.
